Common in the United Kingdom, Shepard’s Pie is the ultimate comfort food! It is an inexpensive dish originating from the sheep country in Scotland and northern England. It is a baked meat pie made with minced or diced lamb and topped with a layer of mashed potatoes.

I love this recipe since it is essentially a one-pot dish. Sure, you must make the mashed potatoes, but Shepard’s Pie is a great way to use leftover mashed potatoes. The idea of Shepard’s Pie is thought to have come from peasant housewives as a way of repurposing the leftovers from Sunday dinner roasts. The vegetables will differ due to the use of whatever vegetables there are on hand.

Shepard Pie Ingredients

Minimal and easily assessable ingredients are used to make this recipe.

  • Avocado oil
  • ground lamb
  • mashed potatoes
  • diced fennel (or yellow onion)
  • diced carrots
  • garlic cloves
  • mushrooms
  • all-purpose flour
  • tomato paste
  • Worcestershire sauce
  • chicken broth
  • thyme
  • frozen peas
  • salt
  • pepper

Shepard Pie Instructions

  1. Heat oil over medium heat. Add carrots and fennel (or onion), sauté for 5 minutes. Sprinkle with salt and pepper.
  2. Add mushrooms and sauté until soft (all water released has been cooked away) for about 10 minutes.
  3. Add lamb and brown until completely browned. Lower the heat.
  4. Sprinkle the flour in, cook until fully incorporated.
  5. Add chicken broth and Worcestershire sauce. Cook until thickened about 10 minutes.
  6. Add tomato paste, thyme and frozen peas mix well.
  7. Top with mashed potatoes. Bake 350 degrees for 25 minutes or until the top is nicely browned. Let it sit about 10 minutes before serving.

Substitutions and Alternatives

Don’t like lamb? Replace the lamb with ground beef. Just as good, but this change makes it a cottage pie.

Use any vegetables you have on hand. Traditional Shepard’s Pie does not call for mushrooms or fennel, these are items I had on hand and enhanced the dish.

Tips

Make the mashed potatoes first, so they are on hand and ready to top once the stew portion is complete. Bake and serve.

Ingredients

  • 1 pound ground lamb
  • 4 cups mashed potatoes, prepared
  • 1 large bulb fennel (or yellow onion)
  • 8 ounces @ (3 carrots), diced
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, diced
  • 6 tablespoons all-purpose flour
  • 3 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 2 cups chicken broth
  • 1 tablespoon thyme
  • 1/2 cup frozen peas
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
